Danish cows on organic farms dance with joy when they are released to pasture in the springtime. Organic Denmark made the bovine rite of spring a spectator sport a decade ago as a way to make the idea of "organic" more visual (most cows on conventional farms don't get to go outside.) In 2005, Økodag, or "Organic Day," attracted about 10,000 visitors. This year, a record 247,000 people lined the fields.
