Stressful times accentuate cravings for sweets, and these days, Americans are running the gamut when it comes to confections and desserts -- from nostalgic favorites to exotic, internationally inspired treats, according to a new Trend Mapping Report from the Center for Culinary Development (CCD) and Packaged Facts. 

In addition to the overall urge for small, sweet indulgences, trends driving the latest confections and desserts include a hankering for the flavors of childhood; growing interest in global cuisine/flavors; and appreciation of artisan sweets, the culinary researchers report.

The nostalgic influence is apparent in the popularity of authentic caramelized flavors ranging from butterscotch to dulce de leche, as well as "whoopee pies" (old-fashioned hand-held cake sandwiches originally hailing from the Northeast). Malt and buttermilk, as well as classics such as sundaes, shakes, floats and pies, are also enjoying strong popularity, CCD notes.

On the exotic/adventurous front, sweets that use olive oil as a savory twist or as a healthier fat "are showing up in fine-dining restaurants nationwide," say the trend mappers. Asian flavors such as melon, green tea and exotic fruits are also increasingly prevalent. One example: exotic, colorful candies and cookies from Japan.

The artisan trend is manifesting itself in the growing popularity of micro-batch chocolates made by small manufacturers who emphasize not only gourmet quality, but socially conscious, environmentally friendly means of production. Similarly, Parisian macarons offering unusual flavors like lime-basil and Earl Gray tea are popping up in fine U.S. bakeries.

Salty sweets that tap into one or more of these trends, like salted caramel and chocolate bacon sweets, are also on the upswing, available from sources ranging from gourmet candy makers to Starbucks, CCD points out.
